Good Eats: Spring Pasta

Dominick and I have been planning to make a colorful pasta to celebrate spring, and here it is! We had a basic idea of how we wanted to make this, but we made up a lot as we went.

You will need:
About 1lb of pasta (We chose bowtie!)
1 Zucchini
1 Red Pepper
1 Yellow Pepper
Broccoli
Olive Oil
Salt
Minced Garlic (Dom says you can also use garlic powder)

Step 1
Dom chopped what we thought would be way too much veggies and it ended up being a little less than what we would have liked. I think 2 peppers, 1 zucchini, and 2 handfuls of broccoli would be perfect. 

Step 2
Boil water for pasta and add about 1/4 cup of salt.

Step 3
Add your pasta of choice to the boiling water and cook for 6-7 minutes (for al dente).

Step 4
While you wait for your pasta to cook, steam your veggies! You can also pan fry them in olive oil. 

Step 5
Strain your pasta!

Step 6
Add some olive oil and a spoonful of garlic to a pan and stir it around as it cooks for a minute or two.

Step 7
Add your veggies and pasta to the pan and stir it around as it cooks for about five minutes.

Add Parmesan cheese if you wish, it's delicious!

Looks yummy! I do a similar pasta dish that calls for italian sausage (I use the turkey kind) and chicken broth but this is definitely a healthier option! My hus would love the addition of broccoli.
